Easy Crockpot Mixed bean stew

There are days when you have a million and one things to do and just need a “throw it all in the crockpot” solution for dinner. This easy mixed been soup definitely came to the rescue with some wonderful flavors to go with. Key is to always have some cooked beans around ( or assorted canned beans). Most of the ingredients should be in your pantry so it’s definitely an easy , yet delicious meal idea.

Had some precooked black and white beans in the freezer. Key word FREEZER. Do not store cooked beans long term in the fridge. In a few days you’ll find yourself opening all windows and doors regardless of the temperature outside.

Like I said before, everything was thrown in a crockpot and by the end of my day, a steaming bowl was served for dinner.

Bean Stew

Ingredients
  

  • 1 1/2 cup white beans (precooked and lightly salted)
  • 1 1/2 cup black beans (precooked and lightly salted)
  • 14 oz can fire roasted tomatoes
  • 10 oz can tomato sauce
  • 1 medium Onions chopped (About 1 cup)
  • 3 cloves garlic chopped
  • 2 cups water (Or vegetable broth)
  • 1/2 tsp cumin
  • 1/2 tsp smoked hungarian paprika
  • 1/2 tsp cayenne
  • 1/2 tsp sugar
  • 1/4 tsp nutmeg
  • salt to taste
  • chopped pasrley (optional for garnish)
  • 2 bay leaves

Instructions
 

  • Combine everything in a crockpot, turn the heat on high and cook for four hours . (Or cook on low for 6-8 hours). Switch to warm and let sit for another 30 minutes. Garnish and serve with bread.
