This watermelon refresher embodies summer in all aspects and might just be one of your favorites when its watermelon season in your area. It might not be officially summer but it sure feels like it with daily temperatures are already approaching high 80’s. We are growing some watermelon this season, but I caved when my girls spotted them at the store for $4.99 a piece. Considering we might not be harvesting until sometime in July or August we decided to embark on this journey with our first watermelon of the season.
WHATS IN OUR WATERMELON REFRESHER
Watermelon: Sweet, crisp, thirst quencher with disease fighting antioxidants and vitamins. When buying go for the firm and heavy. Yes we will be tapping for that dull thud which indicates ripeness per the people who came before us. The bottom part that sits on the ground should also be slightly yellow. Once you’ve picked your best watermelon, wash thoroughly before peeling and cutting into cubes.
Mint: A friend to your gut bringing in a fresh and cooling mouthfeel with each sip. Mint is abundant during this time of the year and is probably one of the easiest herb to grow.
Lemon: A beloved citrus to complement the sweetness of the watermelon
Ginger: Adds a little wake up kick. Another friend to our gut. You can go all out or just add a little. It all depends on how spicy you want it to be but you’ll never go wrong with ginger here.
Now that we have all the ingredients of our watermelon refresher , all we need is a good blender and cheese cloth or a good juicer. Add all your ingredients and blend until smooth. Strain and serve over ice or chill for at least an hour before enjoying. Notice we did not add any water? We don’t need it. Watermelon is about 96 percent and you’ll have no trouble blending. Feel free to add water for a less sweet drink.

WATERMELON REFRESHER
Equipment
- Blender , cheesecloth or Sieve or juicer
Ingredients
- 4 cups watermelon cubed
- 1 large lemon peeled
- 1/2 cup mint leaves
- 1 inch ginger chunk
Instructions
- Combine all ingredients into a blender starting with the watermelon
- Blend into a smoothie, then use a sieve or cheese cloth to strain.
- Enjoy over ice or chill for at least an hour before serving.
