Heard of a vegan meat and potatoes casserole before? Welcome to my rendition of meat and potatoes , my cheeseless casserole that will get everyone talking. Comfort food that warms your body and soul. My husband says he could literally eat it everyday. I guess we now have a go to meal when we have a bad day. A cold winter night dish that got its debut midsummer.
We’re In the middle of a big move and I wanted something quick. When I say quick I mean under 30 minutes quick. Gave all my pots and pans a good cleaning and I wanted a one pan dish that will be ready in no time. With four days before our move , I’m trying to use up what I have and didn’t plan for any grocery trip.
Potatoes ? Check. Used some Yukon  potatoes but you can also use russets. This is not a skin on recipe so get ready to peel and dice.
Gimme lean veggie beef? Check. Gotta use them up before the move. This is probably my favorite meat substitute out there. You can find this at the health foods section ( refrigerated). They make amazing meatballs and in this case beef crumbles. Be ready for a sticky fingers when working with it but you’ll be pleased at the end I promise. once you get them the right bite sizes, spray a cookie sheet, layer and bake for about  5 minutes. They firm up and you’re done with the sticky mess.
Onions? Check
Garlic? Check
Tomatoes?…….TOMATOES????
No fresh tomatoes!!!! Not even a single one . That’s just criminal . If you visit my kitchen, and there are no fresh tomatoes around then something’s up. But hey, a peak in my kitchen cabinet revealed a can of diced fire roasted tomatoes. Even better.
Tomatoes ? Check.
Those are the main ingredients you need for this dish. If you have some fresh thyme at home even better, but if not don’t sweat it. Normally you’ll find me adding things like pepper flakes , paprika , ginger and all that jazz but not with this one. I guess packing up all my spices helped tremendously in keeping things simple.

Vegan meat and potatoes casserole
Ingredients
- 3 Cups diced Yukon potatoes
- 1 Cup diced onions
- 1 14oz can hunts fire roasted tomatoes
- 1 Packet Lightlife gimmelean veggie beef
- 3 Cloves Of garlic
- 3 Sprigs Of thyme
- 1 Cup water
- Salt & pepper to taste
- 2 Tbsp Basil Olive oil
Instructions
- Preheat oven to 450. Cut veggie beef into bite size pieces. Layer on a greased cookie sheet and bake for 5 minutes or until they firm up.
- Heat oil in a medium cast iron skillet. Add in onions, garlic and thyme. Cook for about 3 minutes.
- Add in potatoes and cook for another 5 minutes. Stir occasionally.
- Add in veggie beef, fire roasted tomatoes and water. Stir, cover with foil paper and bake for about 20-25 minutes or until potatoes are tender.
- Carefully remove from oven. Season with Salt/ pepper if necessary. Let sit for about 3-5 minutes.
- Serve and enjoy
