Savory Sweet and Purple Potatoes hash with Eggs

Breakfast does not have to be a chore. Most days I go for a bowl of oatmeal ;its easy, quick and I’m probably running late so why not. Some days I just go for a breakfast shake because its even faster.  Other days I’m empowered and take over the my kitchen world!The point is I try not to skip breakfast; that was something I did lots of back in college but no more.  If “no time”  is a reason for you skipping breakfast, the recipe below may be an option for you.Do you have 15-20 minutes to spare? if yes, try this. If not ……at least drink a  glass of water before running out the door.

The ultimate decision to create a sweet and purple potato dish was mainly because I didn’t have enough of each to make two servings. We’ve all been there, postponing grocery shopping. First attempt was a pleasant surprise and this is now on the list of easy breakfast recipes. The low glycemic index of the sweet potatoes is a plus  if you are watching that blood glucose levels. How about the antioxidant properties of the purple potatoes?

Quick, easy and affordable.

Savory Sweet and Purple Potatoes hash and Eggs

  • Servings: 2
  • Time: 15minutes

INGREDIENTS

  • Extra virgin olive oil
  • 1/4 c chopped onions
  • 1 Tbsp. minced garlic
  • 2 medium purple potatoes (Washed , peeled and diced—small pieces)
  • 1 large sweet potatoes (Washed, peeled and diced)
  • water
  • 2 whole eggs
  • Salt and pepper

DIRECTIONS

  1. Heat about 2 Tbsp. olive oil in a skillet, then add in onions and garlic. Cook until onions starts to turn translucent. Then add in potatoes,  about 1/4 cup of water, cover and cook until tender(~8-10minutes ) Add small amounts of water and continue to cook if potatoes are not as tender as desired.
  2. Stir and season with salt and pepper. Then crack eggs over potatoes and cook until whites are ready and yolk is runny. Remove from heat , garnish and serve.
