Suya spiced kale chips! My village people are coming for me with this one. Suya or Soya spice is a well loved West African spice blend made with roasted peanuts , pepper and other traditional spices. Typically used for meats and seafood but it’s so good I use it on whatever my heart desires.
Today we are making kale ships! These chips are spicy and the perfect light snack. Light because it really is light. My husband jokes he could eat a wheelbarrow full of kale chips and still starve to death. They sure are satisfying and if you do fine yourself eating a boat load , feel no guilt. Especially if its homemade. A drizzle of your favorite cooking oil, pinch of salt, some suya spice and you’re in for one heck of a snack.
THE KALE
We got some fresh, crisp Lacinto kale from out local CSA, Athena Harvest Farms in Fly, TN. Any will work for this recipe but I like how you can cut these and lay them flat on your baking sheet. Wash and pad dry. Then remove the stalk and cut into whatever size you want. They really don’t shrink when you bake , they just crisp up.
SEASONING
Watch the salt! You need just a pinch or so depending on how much you’re making. It’s so easy to over salt kale chips. Most kale chips I’ve purchase were salty to the point of being inedible. That’s why I NEVER buy them. Add some suya spice for a little kick and that nutty flavor.
BAKING
Oven temps vary. This is just a reference so you don’t burn a batch. At 300 degrees and 10 minutes we had some perfectly crispy kale chips with some browns seen on the chips. Any minute longer would have been a little burnt. Single layer on a baking sheet after a drizzle of your favorite baking oil and spices.
This Suya spiced kale chips for sure will make you see kale more looks than you did before.
Suya Spiced Kale Chips
Ingredients
- 1 bunch fresh kale leaves
- 1/2 -1 Tbsp ghee oil (or favorite oil)
- a pinch of kosher salt
- 1/2 Tbsp suya spice
Instructions
- Preheat Oven to 300 degrees
- Wash Kale leaves and pad dry. Remove large stalk / stem and cut into 2 inch pieces
- Drizzle oil to coat, then add in salt and suya spice. Toss well
- Place kale pieces in single layer on a baking sheet and bake for about 10 minutes until crispy.
