Organic white sweet potatoes used did not require any additional sugar.
Just a little sinfulness with some smart balance buttery spread.
A pinch of nutmeg, dill and some black pepper. I could eat this anytime , any day. It was that good. Low carb, protein forward, quick to the dinner table. This really is a feel good meal. With the addition of a new born to our crew, simple and quick meals are very essential to our basic survival.
We are focusing on the chicken and potatoes but a side of steamed broccoli should have your “fitfam” coach giving you some accolades.

Mashed Sweet Potatoes and Suya spiced Chicken
Ingredients
- 2 pieces of chicken breast
- 1 tsp onion powder
- 1/2 tsp Garlic powder
- 1/2 tsp white pepper
- 1/2 tsp cayenne
- 1/2 tsp salt
- 1/4 tsp country onion (optional-can get online or from an african store)
- 1 maggi cube (or chicken bouillon
- 1/2 tsp Smoked paprika
- 1 large organic white sweet potatoes
- 1 Tbsp smart balance butter spread
- a pinch of nutmeg
- 1/2 tsp dill
Instructions
- Combine all spices / Maggi cube , into a small spice dish. mix well.
- Wash and pat dry chicken breast. Completely coat chicken with dry rub and set aside while you prep potatoes.
- Preheat oven to 375
- Heat a cast iron skillet (or whatever skillet you have that can go into the oven) over medium heat. Drizzle enough canola oil to cover bottom, and carefully add chicken. Sear on each side for 3 minutes. Then transfer to the oven and bake for 10 minutes (depending on the size of your chicken breast) or until juices run clear.
- Wash potatoes and peel. Cut into medium sized chunks, Transfer into sauce pot, add enough water to just cover the potatoes. Bring to a boil and cook until potatoes are tender. Carefully drain out excess water
- Mash potatoes until no big chunks are present. Add in smart balance butter, dill and a pinch of nutmeg. Using a small hand mixer, mix until smooth.
- Serve Chicken Breast over sweet potatoes. Enjoy.
