Combine all spices / Maggi cube , into a small spice dish. mix well.
Wash and pat dry chicken breast. Completely coat chicken with dry rub and set aside while you prep potatoes.
Preheat oven to 375
Heat a cast iron skillet (or whatever skillet you have that can go into the oven) over medium heat. Drizzle enough canola oil to cover bottom, and carefully add chicken. Sear on each side for 3 minutes. Then transfer to the oven and bake for 10 minutes (depending on the size of your chicken breast) or until juices run clear.
Wash potatoes and peel. Cut into medium sized chunks, Transfer into sauce pot, add enough water to just cover the potatoes. Bring to a boil and cook until potatoes are tender. Carefully drain out excess water
Mash potatoes until no big chunks are present. Add in smart balance butter, dill and a pinch of nutmeg. Using a small hand mixer, mix until smooth.
Serve Chicken Breast over sweet potatoes. Enjoy.
