Savory Potato Hash and Eggs

You could make breakfast as simple and as quick as you want. In fact I fancy those gourmet 4 course breakfast meals served at quaint little bed and breakfast, but lets be honest who does that everyday? Be it a 4 course meal or a simple toast in the morning , the key is ” do not be boring!”. Most people skip breakfast ( That’s just criminal), not me. Breakfast is viewed just like your avid coffee consumer by me, I get cranky without it. My 9-5 needs me to be pleasant, so I’ll definitely set that alarm 30 minutes early for this quick and easy potato hash. Oh! but you can do better. You can sleep another 10 minutes if you chop everything up the night before.

Ingredients
  

  • 2 medium Idaho Potatoes diced into small cubes (wash throroughly)
  • 1/4 Cup diced red Onions
  • 1/2 Cup diced sweet peppers
  • 1/3 Cup Chopped Kale
  • 1 Tbsp minced garlic
  • 1 Tbsp Rosemary Olive oil
  • a pinch Kosher Salt/Black Pepper
  • 4 whole eggs
  • Chopped Cilantro for garnish

Instructions
 

  • Preheat Oven to 400. .
  • Combine all ingredients in a bowl (except eggs) and toss to mix. Heat skillet over medium heat and generously grease with olive oil spray. Add in potato mixture, and saute for about 3 minutes.
  • Transfer to oven and bake for about 15 minutes or until potatoes are tender.
  • Add in eggs and bake for another 5 to 7 minutes until egg whites are cooked and runny. Garnish with chopped cilantro and serve.
