Instructions
Preheat Oven to 400. .
Combine all ingredients in a bowl (except eggs) and toss to mix. Heat skillet over medium heat and generously grease with olive oil spray. Add in potato mixture, and saute for about 3 minutes.
Transfer to oven and bake for about 15 minutes or until potatoes are tender.
Add in eggs and bake for another 5 to 7 minutes until egg whites are cooked and runny. Garnish with chopped cilantro and serve.
