Spicy Salmon Bake
Friends, let me introduce you this this simple and flavorful baked salmon. Ready in right about thirty minutes and served over a bed of oven roasted cauliflower. Grab a bottle of wine and invite your favorite people for your special dine in event. Succulent salmon in a delicious heirloom tomatoes and pepper sauce. My husband and I usually play a game of ” how much would you pay for this” with our meals. We make a guess based on our dinning out experiences and go from there. As someone who enjoys home cooked meals its hard not to do this. We do love the occasional outings, not worrying about the dishes and just having a good time, but boy does that add up!
You may have to worry about the dishes here but have no doubt, you are sure to have a delectable “upscale” meal at home. Hearty, clean and downright good for the soul.
Peppers / Tomatoes and Essiespice
I keep joking with my husband that we’re getting our weekly CSA for free from our neighbors. They call it a garden, I call it a mini farm. We’ve been getting weekly veggies from them all summer because they really have been blessed with a great yield this year. This week we received a basket with squash, cucumbers, corn, heirloom tomatoes and pepper. Interestingly I noticed these peppers look green after cooking but they were dark purple before. The sweetness of the peppers and tomatoes pair wonderfully with the heat from Essiespice’s Mango chili medley. You can definitely substitute with some scotch bonnet or habanero pepper. Pre seasoning and baking the salmon after pan roasting the veggies let flavors marry into one amazing salmon dish.
Cauliflower
So this is a no carb meal for us but you can definitely incorporate some if you wish. After taking a couple of bites my husband goes ” you really should work with cauliflower more”. Roger that! This roasted cauliflower had me making plans for the other head of cauliflower I will have in the fridge. Spicy, savory with a little nuttiness curtesy of Essiespice Mekko dry rub.
At this point you’ll probably be asking yourself if this is a sponsored post by Essiespice. Its not. We all have certain spice blends we love and this just happens to be my go vendor. I wanted some of that nuttiness from roasted peanuts. In the absence of essiespice mekko dry rub, you can substitute with some ground roasted peanuts. Delicious, you’ll absolutely love it. With salmon for our local whole foods market, veggies from our neighbors and everything else a pantry we created an exciting spicy salmon bake dinner for two. Spicy Salmon bake with roasted Cauliflower
Ingredients
Cauliflower
- 1 large head of cauliflower
- 1/2 Tbsp onion powder
- 1/2 Tbsp Garlic powder
- 1/2 Tbsp mekko dry rub (or ground roasted peanuts)
- 1 tsp Kosher salt
- 1-2 Tbsp olive oil
Salmon
- 2 6-8 ounce salmon fillets
- 1/2-1 Tbsp olive oil
- 1/2 cup sliced sweet onions
- 1 cup heirloom tomatoes cut in halves
- 1 bell pepper sliced
- 2 garlic cloves chopped
- 1/4 tsp black pepper
Instructions
Cauliflower
- Peel any excess leaves from cauliflower. Use a knife and carefully carve off the florets. Carefully rinse in a bowl of water and dry. Chop into small bits . Drizzle olive oil and toss. Add all remaining ingredients and toss again to ensure the seasoning is evenly distributed. Roast at 400 for 15-20 minutes or until tender. Give it a quick stir once
Salmon
- Season salmon with salt , black pepper and drizzle a little olive oil over salmon. Set aside to marinade
- In a medium skillet, heat oil and saute onions for about 2 minutes. A sliced peppers, and cook for another 3-4 minutes until they are just about tender.
- Then add sliced tomatoes and garlic. Continue to cook for another 2-3 minutes. Season to taste. Add in salmon fillets , skin down. Transfer to oven and bake for 12-15 minutes until ready (Temp of 145 and flaky)
- Serve over bed of roasted cauliflower and topped with pepper and tomatoes
