Peel any excess leaves from cauliflower. Use a knife and carefully carve off the florets. Carefully rinse in a bowl of water and dry. Chop into small bits . Drizzle olive oil and toss. Add all remaining ingredients and toss again to ensure the seasoning is evenly distributed. Roast at 400 for 15-20 minutes or until tender. Give it a quick stir once
Salmon
Season salmon with salt , black pepper and drizzle a little olive oil over salmon. Set aside to marinade
In a medium skillet, heat oil and saute onions for about 2 minutes. A sliced peppers, and cook for another 3-4 minutes until they are just about tender.
Then add sliced tomatoes and garlic. Continue to cook for another 2-3 minutes. Season to taste. Add in salmon fillets , skin down. Transfer to oven and bake for 12-15 minutes until ready (Temp of 145 and flaky)
Serve over bed of roasted cauliflower and topped with pepper and tomatoes
