Spicy Salmon bake with roasted Cauliflower

Ingredients
  

Cauliflower

  • 1 large head of cauliflower
  • 1/2 Tbsp onion powder
  • 1/2 Tbsp Garlic powder
  • 1/2 Tbsp mekko dry rub (or ground roasted peanuts)
  • 1 tsp Kosher salt
  • 1-2 Tbsp olive oil

Salmon

  • 2 6-8 ounce salmon fillets
  • 1/2-1 Tbsp olive oil
  • 1/2 cup sliced sweet onions
  • 1 cup heirloom tomatoes cut in halves
  • 1 bell pepper sliced
  • 2 garlic cloves chopped
  • 1/4 tsp black pepper

Cauliflower

  • Peel any excess leaves from cauliflower. Use a knife and carefully carve off the florets. Carefully rinse in a bowl of water and dry. Chop into small bits . Drizzle olive oil and toss. Add all remaining ingredients and toss again to ensure the seasoning is evenly distributed. Roast at 400 for 15-20 minutes or until tender. Give it a quick stir once

Salmon

  • Season salmon with salt , black pepper and drizzle a little olive oil over salmon. Set aside to marinade
  • In a medium skillet, heat oil and saute onions for about 2 minutes. A sliced peppers, and cook for another 3-4 minutes until they are just about tender.
  • Then add sliced tomatoes and garlic. Continue to cook for another 2-3 minutes. Season to taste. Add in salmon fillets , skin down. Transfer to oven and bake for 12-15 minutes until ready (Temp of 145 and flaky)
  • Serve over bed of roasted cauliflower and topped with pepper and tomatoes
