Can I let you in on a secret? Don’t let that fork fool you, half way through, I ditched the fork and just grabbed the potatoes like a taco. They are sooo good it will make you forget where you are and just dig in. Yes! I promise you, they are that good. The perfect appetizers for your dinner party. Your guest will be asking lots of questions but you just go on and smile. Okay do share with them that its probably the easiest thing they’ll ever make next to boiling water.
The crisp sweet edges from the natural sugars of the sweet potatoes caramelizing , coupled with some fresh herbs, garlic and just a tiny drizzle of flavored olive oil. This right here is your “fancy at home” appetizer. Grab your favorite herbs and make a platter of different herb potatoes. There is loaded potatoes and there is LOADED Potatoes!
A whole platter of these babies at your next dinner party and you might have a very hard time getting people out of your house. This is a parsley and garlic herb oven roasted potatoes with a drizzle of Tuscan herb olive oil. Another favorite of mine is sage and garlic oven roasted sweet potatoes with butter infused olive oil.
We are using Caribbean or Japanese style sweet potatoes here.I prefer using these over American sweet potatoes because they stay a little more firm after baking, and the skin crisps up better. I also grew up eating them so they are part of me. Feel free to use regular sweet potatoes but they might not be as crisp around the edges. You might miss out on that subtle crunch with each bite but you will definitely not be giving up on taste or flavor.

Herb Loaded Baked Sweet potatoes
Ingredients
- 2 medium japanese /Caribbean sweet potatoes
- 2 garlic cloves minced
- 1/4 cup chopped parsley
- a drizzle of Tuscan herb olive oil (Or any herb flavored oil)
Instructions
- Pre heat oven to 450
- Thoroughly wash potato skin. Wrap in foil and bake for 30-45 minutes or until tender. Using oven mitts, carefully remove potatoes from oven to a chopping board. Slice potatoes in half, then make cuts across the flesh creating groves.
- Add minced garlic and parsley ensuring some get into the groves. Drizzle olive oil . Return to oven and broil on high for 3-5 minutes until the edges start to brown.
- Remove from oven and serve warm. You can garnish with more fresh herbs.
