Herb Loaded Baked Sweet potatoes

Ingredients
  

  • 2 medium japanese /Caribbean sweet potatoes
  • 2 garlic cloves minced
  • 1/4 cup chopped parsley
  • a drizzle of Tuscan herb olive oil (Or any herb flavored oil)

Instructions
 

  • Pre heat oven to 450
  • Thoroughly wash potato skin. Wrap in foil and bake for 30-45 minutes or until tender. Using oven mitts, carefully remove potatoes from oven to a chopping board. Slice potatoes in half, then make cuts across the flesh creating groves.
  • Add minced garlic and parsley ensuring some get into the groves. Drizzle olive oil . Return to oven and broil on high for 3-5 minutes until the edges start to brown.
  • Remove from oven and serve warm. You can garnish with more fresh herbs.
