Nothing brings people together better than food. And these spicy wings and plantains is all you need. Crispy, tender and finger licking delicious.
In under forty five minutes you’ll get every one ooooing and ahhhhing with their first bites. Do make a big platter if you can, I promise there will be no left overs.
The Simple dry rub for the chicken uses basic pantry ingredients and Essiespice Mekko Dry Rub. In the Absence of the dry rub, use a little more garlic powder, and half a teaspoon each of ginger and ground dry roasted peanuts.
Plantains
Simply fry them! You can grill for a healthier fare. Right off the fryer, toss a pinch or two of kosher salt for that sweet and salty wonder. You can use plantains at any level of ripeness, its just preference. For a sweeter taste, the skin will be yellow with some black spots. They turn to soak up a little more oil if they are too ripe. The best in my opinion is when they are just ripe and a little soft to the touch. You’ll appreciate that crispy warm bite.

Game day oven baked chicken wings and plantains
Ingredients
- 1/2 pound chicken wings
- 1 tbsp canola oil
- 1/2 Tbsp mekko dry rub
- 1/2 tsp onion powder
- 1/2 tsp Garlic powder
- 1/2 tsp country onion
- 1/2 maggi cube
- 2 large ripe plantains
- 1/2 tsp Kosher salt
- oil for frying
- 3 Tbsp Vegenaise
- 1 Tbsp yellow mustard
- 1 Tbsp honey ginger balsamic vinegar
- 2 tsp lime juice
Instructions
- Wash and pat dry chicken wings. Add in canola oil and all dried spices. Mix well and marinate for 10-15 minutes.
- Preheat Oven to 450
- Oil a cast iron skillet ( or any grill pan). Place chicken in single layer. Bake for 25-30 minutes until golden brown and skin is crispy
- Serve with ripe plantains and your favorite dip.
Plantains
- Wash, peel and slice plantains at an angle. Fry until golden brown and transfer to a kitchen towel to drain excess oil. Sprinkle some kosher salt. Serve warm.
Creamy mayo dip
- combine, vegenaise, mustard, balsamic and lime juice in a bowl, whisk until creamy. Season to taste with salt. Serve with wings and plantains
