Cuban Spiced Salmon Bake with Veggies

This Cuban spiced salmon bake is one of those quick meals that make you thank the good lord for spice blends. With two little ones now it’s utmost that meals are ready in a jiffy.

Savory spice is a beautiful spice shop located in downtown Franklin Tennessee. It’s hard to not find what you’re looking for when you walk in through those doors. Meaning something new always catches my eye. Their international spice blends have never failed me so I decided to give this one a go.

I’ve been shaking that spice jar on EVERYTHING! From omelettes to potatoes and everything in between including this salmon and veg bake. We have three happy bellies tonight and yours too If you will!

Fear not if you can’t lay your hands on a Cuban Island spice blend. You probably have some onion, garlic, cumin , oregano, black pepper and some dried parsley at home. Shake these on your salmon with some salt and olive oil.

You can definitely throw in more vegetables. Cut them small enough so they cook at the same time as the salmon . Depending on the thickness of your cut it could take between 6-12 minutes to cook the salmon. At 425 and 8 minutes I got a nice char with the broccoli and a perfectly cooked piece of salmon.

I’m thinking you’re sold by now eh! Pick your favorite veggies, or keep it simple like I did with broccoli and carrots and get to baking. This Cuban spiced salmon bake with veggies is sure to please all. Enjoy!

Ingredients
  

  • ~1 lb Sockeye salmon
  • 1-2 Tbsp olive oil
  • 1 Medium Head of broccoli
  • 1 cup Multi colored baby carrots (Large ones sliced down the middle)
  • 2 Pinches of Salt
  • 1 Tbsp Savory spice Cuban spice blend

Instructions
 

  • Preheat oven to 425
  • Use a pairing knife to cut off broccoli florets. Transfer into a colander and rinse thoroughly under running water .
  • Pad dry florets. Add in baby carrots. Toss these with 1 Tbsp of olive oil, a pinch of salt and 1/2 Tbsp of the Cuban spice blend. Transfer into a baking sheet sprayed with Pam . Ensure it’s a single layer
  • Rinse salmon, pad with a paper towel to remove excess water. Generously rub with 1 Tbsp of the Cuban spice blend, add a pinch of salt . Drizzle with olive oil. Add into tray containing vegetables ( move veggies to the side of using a small baking sheet). Bake at 425 for 8 minutes or until salmon easily flakes off. Veggies should be al dente.
  • Remove from oven and enjoy
