Preheat oven to 425
Use a pairing knife to cut off broccoli florets. Transfer into a colander and rinse thoroughly under running water .
Pad dry florets. Add in baby carrots. Toss these with 1 Tbsp of olive oil, a pinch of salt and 1/2 Tbsp of the Cuban spice blend. Transfer into a baking sheet sprayed with Pam . Ensure it’s a single layer
Rinse salmon, pad with a paper towel to remove excess water. Generously rub with 1 Tbsp of the Cuban spice blend, add a pinch of salt . Drizzle with olive oil. Add into tray containing vegetables ( move veggies to the side of using a small baking sheet). Bake at 425 for 8 minutes or until salmon easily flakes off. Veggies should be al dente.
