It doesn’t get any fresher than this simple and quick cherry tomato salad. Perfect for gatherings and definitely a crowd favorite

Cherry tomato salad is a great way to waltz into fall! It’s the end of the summer and if you’ve been growing tomatoes , you know its at that point where you just cant keep up anymore. You’ve picked your fair share, shared with neighbors, canned, reduced to paste and still, it just will not stop producing.

Well, keep picking or invite neighbors to help you pick. You’re almost there, its almost time for those fall crops if you haven’t started already.

Today we made a quick trip to help a neighbor out. We picked some very sweet delicious cherry tomatoes. There is plenty to make a stew and much more but we wanted to enjoy it within an hour of picking.

This cherry tomato salad is simple, fresh and one of my favorite ways of kissing that summer garden farewell for the season. Elevated with a few items yet letting the tomatoes be the star. I may have made enough for 4 servings only but trust me when I say a huge bowl will be well loved at that end of summer gathering.

This is a side dish but you can always make it a main. There are many variations to this salad but this will always be my favorite because of how simple and quick it comes together.

CHERRY TOMATO SALAD VARIATIONS

  • I love heat! But this was a family salad with two kids so we left it out. Dice up some jalapenos or toss in a few red pepper flakes.
  • Bring in a different kind of sweetness with some fresh watermelon cubes. You cant go wrong with that. And feel free to add a little more crunch with some cucumbers.
  • I went for cilantro here but another match made in the kitchen with tomatoes is BASIL! If you did not grow basil with tomatoes this year do consider it next year.
  • Other additions- olives , nuts and seeds and honestly whatever you fancy. This is my base tomato salad that I build from and it has always steered me in the right direction.

Don’t let those last cherries go to waste. Throw this cherry tomato salad together in about 15 minutes and you are set to please the crowd. It’s simple, quick and absolutely delicious.

CHERRY TOMATO SALAD

Ingredients
  

  • 3 cups cherry tomatoes halved
  • 1 Small lime
  • 1/4 cup feta cheese
  • 1/4 cup cilantro chopped
  • 1/4 cup red onions (Julienne cut)
  • salt and black pepper to taste
  • 1 small hass avocado, thinly sliced
  • 1 tsp olive oil (optional)

Instructions
 

  • In a bowl, add tomatoes, onions , cilantro, feta and squeeze in lime juice. Drizzle a little olive oil and toss. Season to taste with salt and black pepper. Then finally add in slice avocado and gently toss. Serve as is or over toasted bread.
