BEETS IMMUNITY SHOTS

These beets immunity shots are another favorite during this time of the year. Nutrient-rich, absolutely delicious and sometimes used as a pre-workout drink. We may not be able to avoid every ailment that knocks on our doors this season, but we can give our immune system a great boost to help fight it! Like most of our immunity drinks, we are working with just a few ingredients which you can conveniently pick up from your local grocery store or farmers’ market.

INGREDIENT FOR BEETS IMMUNITY SHOTS

  • BEET ROOT: This vibrantly colored root vegetable is a nutritional powerhouse loaded with vitamin C, fiber, folate and amazing antioxidant properties. With its nitrate content, some studies show increased endurance. Just another reason we are loving its presence.
  • PINEAPPLE: One of our favorite energy boosting tropical fruit. A rich source of Vitamin C, A, beta- carotene and other B vitamins. Its sweet and tangy taste negates the need for any extra sweetener and works in tandem with the lemon for that perfectly balanced shot.
  • LEMON: There is always room for some citrus love with our immunity shots. They complement the sweetness from the beets and pineapple.
  • PARSLEY: When the backyard herbs are still thriving, why not throw some in there. Herbs are so nutrient dense it’s shocking they are not always a constant in immunity shots. We are bring in an earthy spin to this beet immunity drink with our use of some fresh sprigs of Parsley.
  • GINGER: We call this a friend to our gut. Ginger has strong anti-inflammatory properties and sometimes use as a digestive aid or for nausea. We love the slight bite it brings to these shots.

PREPARING YOUR INGREDIENTS

Gather all your ingredients and give them a thorough wash. Then peel and cut into small chunks so they are easy to blend. With the lemon, avoid the rind, because this brings an unpleasant bitterness to the immunity shots. You can safe your pineapple peels for our favorite hibiscus tea recipe. We prefer to peel the ginger, even if it’s organic but if you grow your own and prefer to use without peeling go for it. Just be aware of the potential contaminants if proper cleaning and sanitation is not strictly followed.

MAKING THE SHOTS

You’ll need a high-power blender to pulverize your ingredients. We use very little water when blending because we want a concentrated shot. Starting with your high-water content ingredients work best, so pineapple first. Then we strain this blend with a cheese cloth. If the resulting shot is too strong or sweet you can dilute to taste with water.

HOW TO STORE YOUR BEET IMMUNITY SHOTS

Homemade juices are best consumed within 2-3 days or 7 days if pasteurized. For convenience, we pasteurize and store these in 2-ounce bottles. Check out our pineapple immunity shots to see how we pasteurize our homemade juices and immunity shots.

Ingredients
  

  • 1 large pineapple cut into small chunks (About 5 cups)
  • 3 medium beets cut into small cubes (~3 cups)
  • 3 large lemons
  • 3 sprigs flat leaf parsley
  • 2.5 ounces of ginger root- peeled
  • 1 cup of water (optional)

Instructions
 

  • Add all ingredients into a high speed blender starting with the 1 large pineapple. Then add in water and blend into a smooth pulp. (You can split ingredients into smaller batches to ease blending)
  • Transfer blend into a cheese cloth and squeeze out as much juice as you can.
  • Transfer into sanitized 2 ounce serving bottles and enjoy daily.
  • Consume within 3 days or pasteurize and consume within 7-10 days.

Notes

You can adjust individual ingredients to your taste. Go heavy on the lemon if you want a little more tartness, or ginger if you want a little more kick to your immunity shots. Whichever route you take, you’ll be satisfied with just how many nutrients these little shots pack.
