Combine water and sugar into a large skillet and the cinnamon stick and star anise. Bring to a boil.
1 cup water, 3/4 cup sugar, 2 star anise, 1 cinnamon stick
Once sugar is completely dissolved, add in vanilla, and roasted almonds. Stir and let simmer
1/2 tsp vanilla, 2 cups roasted almonds
Continue to simmer on medium until sugar starts to crystalize.
Cook for a few more seconds, ensuring sugar does not caramelize.
Transfer unto a parchment paper and let cool for 3-5 minutes
Enjoy. Store leftovers in an airtight container
