Bacon and Eggs breakfast Bagel Sandwich

Ingredients
  

  • 1/2 cup baby arugula
  • 1 beef steak tomatoes sliced
  • 1 Tbsp Vegenaise
  • 2 Eggs

Instructions
 

  • Add bacon in a small skillet and cook on low heat until crispy. Transfer to a paper towel. Pour out bacon grease leaving about a teaspoon or so in the skillet. whisk eggs and add into skillet. (do not scramble). Cook until ready on one side, then flip and turn heat off. The hot pan will continue cooking the eggs.
  • To build the sandwich , slice bagel into half. Spread vegenaise on bottom half. Then add eggs, bacon, tomatoes and arugula. Cover with top half. Slice in half and enjoy

Notes

  • Notice no salt was added in the eggs? The bacon takes care of the salt but you can season the eggs with more salt if you want.
