Sweet Ripe Plantain Crisps

Ingredients
  

  • 2 large ripe plantains
  • 1/2 Tbsp grated ginger
  • 1 Tbsp Mango chili medley
  • pinch of salt
  • oil for fying

Instructions
 

  • Wash peel and slice plantains into slim wedges as shown Add in spices, toss well and marinade for about 15-20 minutes.
  • Heat oil and fry until crispy. Remove, drain on paper towel and serve with roasted peanuts.
