West African Lamb Stew
Rice and Stew is definitely a must on Christmas day. This lamb stew is hearty and flavor packed. Serving this tomato base stew with rice is the norm but it can definitely be served with couscous, plantains, or even some fresh baked bread.
Oven Baked Jollof Rice
Its no Christmas part without jollof. Common in no only Cameroon but Nigeria, Ghana , Senegal and more. Different ways of preparing it for sure but this oven baked jollof is delicious, quick and definitely saves a burner for another item on your Christmas menu.
Fried Plantains and Pepper Sauce
My all time favorite side dish. Plantains! These sweet pan friend plantains are a great addition to the table. The sauce might be daring for some but we like it hot!
Spicy Mushroom Pepper soup
A soup that is always served at almost every Cameroonian gathering. Christmas for sure. Traditionally made with goat, beef or chicken. There is a vegan option! Still packs loads of flavor and heat.
Rice and Beans
Beans, especially pinto are a staple in Cameroonian cuisine. Switching to black beans and using the same fresh herbs and spices. This rice and black beans bowl might just be the nest thing on your table tonight or tomorrow.
Oven Roasted Red Snapper
Grilled Whole fish! I remember my mom baking whole salmon when we visited Canada for Christmas. Whichever kind of whole fish you’ve tried befor, try it the West African Way! You will love this marinade!
KOKI BEANS
This is what we enjoy alongside some traditional meals like pepper soup in my village. Koki, easily explained as a black eyed peas pudding made with palm oil and other seasonings is my trial meal. Get peeled black eyed peas to safe some time but its defintiely worth a try.
CHICKEN SUYA
Suya is served all year round but its a must on this list. Those who choose to go out to a night club for some dancing will definitely be enjoying suya alongside some adult beverages.
REFRESHING SORREL DRINK
Good for all! You still have time to serve this at your Christmas party. Make it tonight and everyone, I mean everyone from toddler to grandma will thank you.
CHRISTMAS CHIN CHIN
We enjoyed this every Christmas day as a child. Making chin chin included everyone, from rollin g, to cutting fun shapes, frying and snaking while we chat. Save some for later if you can, they are that addictive.
Christmas may be once a year, but these recipes can be on our dinner or lunch table as many times as we like. Hope you savor them as much as we do.
