This potato lentil soup with kale is calling on everyone to try it! Vegan or not you will love to enjoy a bowl. Flavorsome bowls like these should be on everyone’s table , so I’m here to do just that. Delicious and a whole lotta goodness with each bite.
It’s a day before our big move. Movers are hauling our things into a 26 feet Penske truck. My husband is about to drive a 26 feet truck over 600 miles south from Wisconsin to Tennessee for the first time. Wait…..make it over 30 feet since we’ll be towing gangus, his car on a car carrier . It doesn’t get any scarier than that on the road but we are excited about the move. We will miss wisconsin, our friends, neighbors , co workers and I must say it, all the good cheese from our dairy state.
As I walk out to check on the loading process, with Baylee “Cakes” (my little girl) in my arm, I spot my neighbor. The promise to share her garam masala recipe is definitely something I’m thinking of. One day to the move is not too late eh? As we chat about our move and our not so fun fire drill experiences at our apartments, I told her I would still love to have that garam masala recipe.
She goes in and comes out with a recipe book given to her by her mother when she got married in 1981. She learns how to cook following recipes from this book, making little changes out of curiosity and necessity. Developing flavors that she is now sharing with me. Weathered and filled with sticky notes, I couldn’t wait to snatch as many recipes as I could. Considering I couldn’t possibly copy all what I needed in that short time, I took pictures of my favorite recipes . One of them being her garam masala recipe.
Obviously the garam masala recipe is not mine to share but this lentil soup made with garam masala is a must share. In the process of chopping up my onions for this recipe I hear my mom saying ” I hope it tastes like my friend’s Indian lentil soup.” I can’t help but laugh out loud. Now what do I even say to that? “Oh yes ma, I’ll make sure it does?”
This is my own take on an Indian inspired lentil soup. Roasting spices and making my own garam masala from now on is something I look forward to doing. Especially if I get to enjoy flavorful bowls of lentil soups thanks to it. Try this potato lentil soup and share with friends and family. You’ll understand my obsession.
Spicy potatoe Lentil soup with Kale
Ingredients
- 1 & 1/2 cups brown lentils
- 1 & 1/2 cup Roma Tomatoes diced
- 1 medium Idaho potatoes diced
- 1 cup sweet onions diced
- 2 cloves Of garlic
- 1/2 Tbsp crushed ginger
- 4 cups of water
- 2 Tbsp canola oil
- 1 Tbsp Garam masala
- 1 Tbsp Curry
- 1/2 Tbsp Cumin
- 1 tsp coriander
- 1 tsp Turmeric
- 1 tsp cayenne
- 1 tsp Smoke paprika
- 3 Star anise
- 6 cloves
- salt to taste
- 1 Cup Chopped Kale (Optional)
Instructions
- Heat oil in a large skillet. Add onions and cook for 3 minutes. Add in all powdered spices , reduce heat to low and cook for another 3 minutes.
- Add in tomatoes, garlic and ginger . Cook for a minute, add a cup of water cover and cook for 5 minutes.
- Then add diced potatoes, lentils and remaining water. Season with salt, cover and let simmer for 35 minutes until lentil are tender. Roast star anise and cloves in the oven on broil for about 2 minutes until they just start to smoke. Add them in 25 minutes into simmering.
- Add chopped kale, cook for another 5 minutes. (Add more water if too thick ) Adjust seasoning if necessary. Serve with naan, chapati or cornbread
