Spicy Avocado Toast

Spicy Avocado Toast. Most mornings, there is a steaming bowl of oatmeal ready to go before my tribe awakes. Other mornings prayers to the toddler gods and hopes for an extra 30 minutes of sleep are unheeded. As I drag myself out of bed I regret the late night. You’d think at this point I should’ve learned to close the paper back by 9pm. Not a chance , and I suppose no such luck with them sleeping in this weekend either.

I suppose we are rising and embracing the day with this spicy avocado toast topped with some crispy edged sunny side up eggs.

EGGS AND AVOCADO

How is your egg situation? Most mornings we do hear that “cock-a-doodle-doo” coming from our neighbor’s backyard. Country living…sorta. who would’ve thought! Next to summer long vegetable baskets from the neighbors, their farm fresh eggs are unbeatable.

PICK THE RIGHT AVOCADO

The convenient clicklist. How about those avocados? My note section on my clicklist order usually reads “only 2 ready to eat, and 4 firm please”. Hah! Like that ever works. Pick up order and yeahhhhh, they’re finally rid of the two that were going to the trash. Solution to this, go grab your avocados, or keep it off the clicklist. Firm avocados will ripen in 3-4 days, give or take, so plan accordingly. To pick ready to eat one, grab the whole avocado and gently press with the thump. You should feel a little give but not so much that there is a dent. Also, if there is a little stalk left, tug that off. It should be green and not brown. This should help but again, there has still been some disappointments despite all the efforts.

  • Avocado Toast

Can we dive into this quick avocado toast? Revamping my mother’s “pear and bread” breakfast. Avocado is pear in Cameroon. They are buttery and gigantic compared to hass avocados. . Some red onions for the needed crunch; a little maple syrup for some sweetness and a touch of heat with the mango chili medley from Essiespice. Go as spicy as you’d like, we love it spicy here.

If your lot is as hungry as mine ever morning, this plate will come to your rescue. It’s simple, quick, healthy and hearty. Mornings are a lot easier to manage when food is ready in a pinch. If you’ve got 10 minutes, here is your breakfast, lunch or even dinner for the day.

Ingredients
  

  • 1 Large Avocado
  • 1 Tbsp distilled vinegar
  • 1 Tbsp Vegenaise (sub with mayonnaise)
  • 1 tsp maple syrup
  • 1 tsp Essiespice Mango Chili Medley ( or more )
  • 2 slices of bread.
  • 1 Tbsp chopped red onion
  • a sprinkle or red pepper flakes
  • cilantro for garnish

Instructions
 

  • In a bowl combine , vegenaise, distilled vinegar, maple syrup and the mango chili medley. Stir well until homogeneous. Peel and cut avocado into small chunks. Transfer into bowl and mix gently ensuring it's not mushy. Set aside.
  • Heat about a table spoon of oil in a large non stick pan. Carefully crack eggs , ensuring yolk stays intact. Cook until white is set and edges are just brown and crispy.
  • Toast bread in toaster or grill. Spread mango chili medley on toast (optional for more heat). Add scoops of avocado mix and spread. Top with fried egg. Season eggs with some salt and a dash of red pepper flakes.
  • Garnish with fresh cilantro and enjoy
