SIMPLE CROISSANT EGG SANDWICH

This simple croissant egg sandwich is one of the easiest and well-loved breakfast items you can add to your breakfast or brunch menu. In just about 20 minutes your family and guests will be biting into this flaky goodness stuffed with delicious eggs. Picture a Parisian Cafe right in your own home. Just in time for Easter!

CAN WE MAKE AHEAD?

Now if you’re hosting any gathering, the food needs to be on point but we don’t need to labor for hours. You need to enjoy your party just as much as your guests if not more. That being said, it takes over 13 hours to make croissants from scratch. You do not have to do that, these wildgrain croissants come frozen and bakes in no time. You can bake the croissants ahead of time and give them a quick warm just before serving.

MAKING THE EGGS

We are using whole eggs. You are welcome to use just egg whites but whole eggs impact not just the color but also the flavor and texture of your eggs. You want a good balance of fluff and creaminess.

Roma tomatoes and thinly sliced onions gives our eggs more bite, flavor and mouthfeel.

Whisk eggs with tomatoes, onions and parsley until bubbly. Season with salt and black pepper and that’s it. Cook to a nice soft partial omelet to stuff your croissants with. Your guest will enjoy being treated to this delightful breakfast.

BUILDING YOUR SIMPLE CROISSANT SANDWICH

These eggs are just simply delicious. That is definitely what we love about this meal at home. Make it as is, again we want to enjoy our party as much as our guests or you can build from here. When the pastry you are working with is amazing, there is no need to doctor things up too much. That being said, here are a few things you can add to your sandwich.

Dressing: We are using some real mayonnaise as a spread, but you can also use cream cheese, butter or other spreads of choice.

Greens: Arugula, Spinach, butter lettuce you name it. Try to use something light that adds to but will not overpower other flavors. I love kale, but we will have to hold off on the kale here but if you’re so inclined, you’re welcome to add some. Go for tender, baby kale leaves

Meats and fish: Bacon, sausage, prosciutto, smoked salmon. Bringing up the protein content to make it an even more substantial meal.

Ingredients
  

  • 5 large eggs
  • 1/2 cup diced Roma tomatoes
  • 1/8 cup thinly sliced onion
  • 1/8 cup chopped parsley
  • 1/4 tsp Black pepper
  • 1/2 tsp salt ( Or to taste)
  • 1 Tbsp Avocado oil ( or butter)
  • 4 croissants
  • mayonnaise

Instructions
 

  • Crack eggs into a bowl, add diced tomatoes, onions, parsley , salt, black pepper and whisk together until frothy.
  • On a heated nonstick skillet, add avocado oil. Then pour whisked eggs to skillet. Spread to ensure tomatoes , onions and parsley are evenly spread out.
  • As egg cooks, lift from sides and tilt pan so uncooked portion flows and cooks (about 3-4 minutes)
  • Then flip and cook another minute or until egg whites are set and not runny. Don't be afraid to break it apart.
    Transfer to a plate
  • To build sandwich, quickly toast croissant in the oven for about 2 minutes if not freshly baked. Then slice croissant open and spread mayonnaise on one or both sides. Fill croissant with eggs, close sandwich and they are ready to serve
  • Enjoy!

Notes

  • Transfer eggs from skillet to plate when ready to avoid overcooking your eggs.
  • You can use other preferred condiments as spreads.
