REFRESHING SORREL DRINK TIPS
You can find the dried hibiscus tea at your local Caribbean/Mexican grocery store. I get mine from a Mexican grocery store. You can also purchase online. Nowadays there is an online market for everything.
You’ll also need one large pineapple. Preferably organic or thoroughly washed as you will be using the skin. This recipe is very similar to my folere recipe but with some extra additions. Love them both. You want to steep for at least six hours. I actually do an overnight batch typically and strain in the morning.
To get a little more of the pineapple flavor, crush about half of the pineapple and add together with the peel. The boil should help with pasteurization. So it is not a surprise this can last more than a week in the refrigerator. It never does though……its that good.
Warm notes of cinnamon , cloves and star Anise. A little tropical vibe from the pineapple. You can sweeten or completely skip the added sugar. The dried sorrel also impacts a little tartness. Get a little more kick by adding some fresh ginger.

Ingredients
- 4 Quarts of water
- 4 cups dried hibiscus tes (sorrel)
- 1 large pineapple
- 10 cloves
- 4 star Anise
- 1 medium cinammon stick
Instructions
- Thoroughly wash pineapple. Peel and transfer into a large pot. Crush half of the pineapple and add into pot.
- Add 4 quarts of water and bring to a rapid boil. Add in dried hibiscus tea, cloves anise and cinnamon. Boil for an 10 minutes. Remove from heat and let sit for 6- 8 hours.
- Strain with a colander to remove pineapple skin and big chunks, Use a small mesh sieve and strain two more times. To sweeten, prepare simple syrup by mixing 1 cup of sugar with 1 cup of water. Let dissolve over low to medium heat. Use to sweeten tea to taste.
- Best served after refrigeration or on ice. Can also be enjoyed warm.
