Well scratch that, at least for now ( Can’t have brats without Sauerkraut, now that’s just criminal). Today we are taking cabbage home, home being Cameroon, West Africa…I know you already know that by now :-).
There are certain vegetables that were always present in our garden growing up. Cabbage was definitely one of them, amongst beans, corn, ground nuts, peppers and more. The richness of the soil was really a blessing. To see your vegetables sprout from seeds to a bountiful harvest that will feed the family for months.
Here, the cabbage is sliced, blanched and cooked in a peanut base sauce loaded with fresh herbs, bringing out some wonderful west African flavors.
