PARTY CHOPPED KALE SALAD

Thinking about a dish for that summer get together? Serve a chilled bowl of this party chopped kale salad to your next gathering for the win. Vibrant and nutrient packed with your favorite cool season ingredients that are still lingering at your farmer’s market this summer.

WHAT YOU’LL NEED FOR THE PARTY CHOPPED KALE SALAD

Kale: This robust supper green is one of the best to incorporate into salads. An antioxidant powerhouse loaded with essential vitamins and minerals. For this salad we are de-veining some freshly harvested kale and chopping using a food processor. This also helps to massage the kale.

Cauliflower: The bouquet that keeps on giving. This low calorie, high fiber addition to the salad brings some naturally sweet crunch.

Red Cabbage: Bringing in some vibrancy to the bowl alongside its prebiotic effects. Feel free to use a green cabbage if that is what you have on hand.

Red Onions: A fresh crunchy bite to add a little wake up kick to the bowl.

*****To reduce the bite from onions, soak in ice cold water for about 5 to 10 minutes.****

Dried Cranberries: These are our favorite when bringing some sweet and tangy chewiness to the salad. Feel free to chop into smaller bits like we did here.

THE SALAD DRESSING

This salad dressing is a keeper and goes wonderfully with most salads. All you’ll need

  • Mayonnaise ( You can substitute with any vegan based dressing. Vegenaise works best)
  • Plain low fat Greek Yogurt
  • Distilled Vinegar
  • Cane sugar or honey

Whisk all ingredients until smooth and dress your salad. Feel free to add more or less of the dressing depending on your preference.

  • Shredded Beet root
  • Sliced Radishes
  • Hulled hemp hearts

Ingredients
  

For The Salad

  • 2 cups Chopped Kale
  • 1 cup riced Cauliflower
  • 1 cup chopped Red Cabbage
  • 1/4 cup chopped Red onions
  • 1/2 cup Dried Cranberries chopped

For The Dressing

  • 1/3 cup Mayonnaise
  • 1/3 cup Plain Greek yogurt
  • 2 Tbsp Distilled Vinegar
  • 3 Tbsp Cane Sugar

Instructions
 

Make The Salad Dressing

  • Combine all ingredients in an immersion blender or shaker and blend until smooth. Set Aside

Make The Salad

  • Add all salad ingredients into a large bowl and mix well until combine.
  • Then pour in the salad dressing and thoroughly mix. Serve immediately or chill for up to an hour before serving.

Notes

Salad can keep for up to 3 days in the fridge after you add the dressing. You can refrigerate salad and dressing separately if you want to dress the salad just before serving.
The red cabbage will tint the salad reddish pink a little and that is absolutely okay, but if you’re kin on colors, don’t over mix when adding the dressing.
