This hibiscus champagne cocktail is sure bringing to life that holiday spirit. Whether you choose to ring in the new year at the comfort of your home or that pricey ticketed new year party, a drink in hand to celebrate the year for me brings good fortune. Be it a mocktail, cocktail or a glass of water, a toast with friends, family and loved ones to the successes and failures of a year gone and another to come is worth celebrating.
This hibiscus champagne cocktail is so versatile and adds a dash of floral notes to the brut champagne we are using. We want to start by making a batch of folere , our Cameroonian style hibiscus tea. Chill this alongside your champagne of choice for at least three hours before serving.
Once you are ready for the cocktail, we like to bring in a little more pineapple. Mash in a shaker, add in some ice and then your hibiscus tea. Shake and pour into cocktail glasses or champagne flutes. Then top with chilled champagne of choice.
For cocktail glasses we recommend keeping it at a two to one ratio of hibiscus to champagne. Using smaller glassware, like a coupe or champagne flute, one to one ratio. Whatever ratio works best for you is what you should be celebrating with.

HIBISCUS CHAMPAGNE COCTAIL
Ingredients
- 1/3 CUP fresh pineapple chunks
- 4 ounces hibiscus tea
- 2 ounces chilled brut champagne
Instructions
- Mash pineapple chunks in a shaker, then add ice and hibiscus. Stir or shake and pour into serving glassware. Then add chilled champagne. Enjoy
