Gimme Lean West African vegan meatballs

It’s been almost three years  since my husband became a pescaterian and I must say it has been a welcomed challenge.  Who would’ve thought the vegan aisle would be my first stop at the grocery store? Well nowadays, hunting for the next meat substitute is always on the agenda. Stumbled upon  Lightlife vegan proteins and decided to give it a go. So hopefully this will be a meatless Monday inspiration for some of you out there.

The texture is so meaty one could be tricked they just ate meat. They can go any direction you want and I plan on traveling the globe with the different flavor profiles. West Africa it is  today.

 

Gimme Lean West African vegan meatballs

  • Servings: 2
  • Time: 30 minutes
  • Difficulty: easy
  • Print
Ingredients

  • 14 oz Lightlife gimme lean veggie beef
  • 1/4 cup finely chopped parsley
  • 1 teaspoon minced onion
  • 1 teaspoon minced garlic
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 3 tablespoon olive oil
Sauce
  • 15 oz hunts tomato sauce
  • 1 cup crushed roma tomatoes
  • 2/3 cup mild fresh herb blend
  • 1/4 cup finely chopped onions.
  • 1 teaspoon minced garlic
  • salt to taste
method
  1. In a large skillet combine tomato sauce and crushed tomatoes. Bring to a gentle simmer and let cook for about 15 minutes.
  2. Meanwhile, combine all meatball ingredients in a bowl (Except oil), mix well and roll into 3/4-1 inch round pieces.
  3. Heat oil in  a medium skillet and add meatballs. Cook, while gently rotating to a nice golden brown. Add onions and garlic, stir and cook for another minute.
  4. Transfer tomato mixture into meatball skillet. Add spice blend, stir and let simmer for about 10 minutes. Season to taste.
  5. Combine with pasta, mix well and serve or serve over pasta. Cook any pasta of your choice according to package direction
