Kick off the party with this colorful mango kiwi salsa. A fresh burst of flavor with each bite. Sweet, salt, a little tangy and some heat from jalapenos that brings everything together wonderfully.
This playful take on salsa orchestrated by my five-year-old that has now become one of our favorites. A fun and definitely different way to use up fruits.
FRUITS IN SALSA
The traditional salsa or pico de gallo will contain mainly tomatoes, onion, jalapenos, lime juice, salt and black pepper. Sometimes adding some cilantro too.
This mango kiwi salsa deviates from mainstream salsa with more sweetness. Going a little heavy on the lime juice helps balance the sweetness from the mango and kiwi. Jalapenos may be optional but that little kick really brings everything together. To help tame the heat, slice down the middle and scoop out the seeds.
There are so many other fruits you can add to salsa. Pineapple being a favorite next to mango. Use fresh or grilled, and same goes with the mango. Peaches, especially when they are in season from may through august. Watermelon and berries too.
STORING
With how quick these ingredients can be put together, we prefer to make it the day off and chill in the fridge before serving. With the high sugar content from the fruits, eating it up within 3 days is best. Fruits will start to break if stored longer and this will impact the flavor.
WHAT TO SERVE WITH SALSA
We are keeping the chips and salsa here but there is an array of ways to enjoy this mango kiwi salsa.
Entertaining? Serve as cold salad bowls or cups.
Add a scoop on some romaine hearts for a fresh , crisp bite.
Serve over some grilled fish, say salmon or pan seared mackerel. All that acid pairs wonderfully with the fattiness of the fish.
Most importantly , serve with good company!
