EASY BROCCOLI SALAD

This easy broccoli salad is a crowd pleasing favorite that you can put together with minimal effort. A little chopping and grating here and there and you have this wonderful bowl of goodness that is guaranteed to satisfy. Visit your local grocers and gather these fresh ingredients. You’ll definitely be making this another time.

INGREDIENTS FOR BROCCOLI SALAD

  • Brocolli: Fresh tender broccoli florets bring in a crisp bite to the salad. Rich in vitamins, fiber, minerals and phytochemicals known for their potential cancer fighting properties.
  • Apples: The refreshing crunch of crisp fuji apples adds a sweetness that balances the slight bitterness from the broccoli.
  • Craisins (Dried Cranberries): They are sweet and tangy and brings in a nice chewiness to the salad.
  • Red Onions: They add a bold zesty kick to the salad, bringing together the tanginess and sweetness of the apples and cranberries.

My kids, who have an avid aversion for uncooked broccoli absolutely enjoy this salad. Perchance it is the sweet crunchy bite of the golden delicious apples, or maybe the chewy tangy bite of the craisins. We will not try to answer the why but will stick to fulfilling the “more please ” request.

For me, the dressing makes it! We enjoy this dressing on many salads but we are going heavy with no apologies on this broccoli salad. Toss a generous amount over your chopped and shredded veggies. Feel free to save some for later if the salad seems overly dressed. If you do save some, try with this salad bowl recipe. You will definitely keep this one handy.

You can make this ahead and chill until serving time. You will have to dress the salad to prevent the apples from browning and once your guests arrive, just give it a good toss and serve.

Ingredients
  

  • 3 Cups of broccoli, chopped
  • 1 cup grated carrots
  • 2 cups golden delicious apples cubed
  • 1/4 cup craisins
  • 1/2 cup red onions

DRESSING

  • 1/3 Cup mayonnaise
  • 1/3 Cup plain Greek yogurt
  • 2 Tbsp hibiscus infused vinegar (or any vinegar)
  • 2 Tbsp cane sugar (or honey)
  • 1.5 Tbsp yellow mustard
  • 2 Tbsp honey ginger balsamic vinegar

Instructions
 

  • Combine all salad ingredients into a large bowl. Whisk dressing ingredients until creamy. Pour over salad and toss well. Serve or chill for 20 minutes before serving
