Cilantro Lime

Lets simple call this cilantro lime because that is what it is. Cilantro lime! A way to preserve herbs which can be used for marinades, salad dressings and so much more. Prevent their untimely death. I’ve murdered quite a few bunches of herbs in my lifetime , I must confess. With the summer approaching and herb gardens popping up, this is a simple method to preserve their flavor.

CILANTRO LIME : MAKE IT YOUR OWN

You can use this as is, or add a little more of you. Sometimes we add a scotch bonnet for heat. For a little extra flavor, we added a garlic clove, some black pepper and salt too. Treat basil the same way, but without the lime.

STORAGE AND USE

You can freeze in ice cube trays for at least 4 months. Store in a decanter and top with more olive oil. Or in a mason jar with a tight seal, also topped with more olive oil. We typically use within three weeks and its just as fresh as on day one. Quick shake or mix and drizzle over meats and seafood as a marinade. We also love adding a scoop on some stewed black beans.

Simple, quick, sustainable and saves you time and money. Hope you get to save a bunch of Cilantro next time.

Ingredients
  

  • 2 bunches of cilantro
  • 1/2 cup of olive oil
  • 1/4 tsp of salt (or to taste)
  • 1 tsp black peppercorn (or to taste)
  • 2 garlic cloves
  • juice from 1 lime

Instructions
 

  • Wash and trim about an inch off cilantro bunch
  • Combine all ingredients in a blender and blend until smooth. Adjust seasoning. Transfer into storage container of choice (preferably glass). Top with more olive oil and seal for use within a month. Or store in ice cube trays and freeze for at least 4 months.
