Cashew Milk Chia Oatmeal topped with Berries

Oatmeal topped with berries! Let me tell ya,  nothing beats a good bowl of oatmeal! The fun of transforming simple things like quick oats into a hearty breakfast bowl   that will keep you going for hours. The options for toppings are obviously endless, so any new idea is worth celebrating. My husband says he’ll skip that morning shower before skipping breakfast. That’s how serious and important breakfast is in this household. Thankfully for us all and his fellow colleagues, I wouldn’t let it come to that.

My quick oats definitely got more than a minute with this recipe. Added some chia seeds which definitely gave it another notch in making the bowl more filling. While it slowly cooked, I consistently added cashew milk every 2 minutes until it was nice and creamy. Now about the toppings, when he mentioned peanut butter, I was short of words to voice my objection, Who puts peanut butter in oatmeal????? But eh, to each thy topping. So peanut butter it was, and what a pleasant surprise it was.

So we made two bowls, one topped with berries/ peanut butter, another topped with berries and shredded coconuts and grape nuts.

Ingredients
  

  • 1 1/2 Cup Quick Oats
  • 2 Cups Cashew Milk Unsweetened
  • 1 1/2 Cup water
  • 3/4 Cup blueberries
  • 3/4 Cup Blackberries
  • 1 Tbsp Creamy peanut butter
  • 1 Tbsp Grape nuts
  • 1/4 Cup Coconut flakes
  • 1 Tbsp chia seeds

Instructions
 

  • Bring water to boil. Add in oatmeal, chia seeds,stir and cook for a minute.
  • Add in 1/2 cup of cashew milk and cook for about 2 minutes
  • Continue to add 1/2 cup cashew milk and cooking until oats are soft and creamy
  • Add toppings and enjoy
