Breakfast Avocado Toast

This is your five minute breakfast treat! Your passport to never skipping breakfast. Refreshing , hearty and quick. That stop at starbucks for a coffee and a muffin will literally take you longer and cost you two times more. You can’t skip breakfast when you can whip this toast in no time.

My mom loves avocados. When ever she visits we go through an absurd amount of avocados and bread in a week. You should hear the banter between my mom and husband over avocados and bread in this house. Its hilarious. My husband is a ” cold cut” champ. If I’m not around to make something, you best believe a sandwich will be on the menu. A darn delicious one I must say. My mom on the other hand, will whip up a gourmet breakfast toast with just avocado, mayo and vinegar. I have enjoyed quite a few of these and its time I put a spin on it.

 

 


Avocado toast

Today we are going with some crunch, a little sweetness and that extra zing from sliced onions. Guaranteed to be the simplest and filling breakfast Avocado Toast you’ll never want to skip.

Ingredients
  

  • 1 large hass avocado (peeled and flesh scooped out into a bowl)
  • 1/2 tsp white vinegar
  • 1 Tbsp Vegenaise (or mayo)
  • 1 Tbsp crushed salted peanuts
  • 1/2 Tbsp craisins
  • some sliced white onions
  • some salad greens
  • 2 whole grain slices of bread

Instructions
 

  • Toast bread as desired
  • In a bowl combine avocado, vinegar veganaise and onions. Mix well but let it be chunky. Spread over toast. Top with salad greens, peanuts and craisins. Enjoy
