This beets and berry smoothie is what we’ve termed “beet-it” at home. Loads of immune boosting and antioxidant elements. Most definitely an addition to our ready to go breakfast smoothies for a week.
BEETS
Here we are using the beetroot , but the entire plant is edible. So if you do find a whole bunch , chop some of the stems and leaves and add into your smoothie. When buying , ensure what you grab has some weight to it with no mushy spots. This is where seasonality and local farmers come in as always. Down here in Tennessee beets are in season June through November but reach out to your local farmers.
FROZEN BERRIES
There is always going to be frozen berries available but you can freeze some of those seasonal summer berries for future use. May through August are great months for berries in Tennessee, especially blueberries and strawberries. Here is how you could easily freeze those pick-your-own berries for future use. For this beets and berries smoothie we are using blueberry and strawberries only but you are welcome to use any other fruit.

WHAT LIQUID BASE TO USE
To bring everything together we are using unsweetened almond milk. Other options that work wonderfully include
Coconut water or just plain water
Cashew milk ( or any nut milk of choice)/ Oat milk
Beets are naturally sweet so preference to stay away from adding any juice as a liquid base helps curb the sugar content.
BEETS AND BERRY SMOOTHIE ON THE GO
You can prepare a weeks worth in zip lock bags and just pop it in the blender the morning of. You can also store ingredients a wide mouth mason jar or blender cup. Just add liquid and blend. Make ahead smoothies like this beet and berry smoothie is a great way t o effortlessly introduce healthy smoothies into your daily routine. This also can be enjoyed anytime of the day.
Beets and berry Smoothie

Ingredients
- 1 cup diced beets
- 1 cup mixed frozen berries (strawberries/blueberries)
- 1/2 lemon (peeled, de-seeded and diced)
- 1 Tbsp hemp seeds
- 1/2 inch fresh ginger (peeled )
- 1 Tbsp raw honey
- 6 ounces unsweetened almond milk
- 6 ounces cold water
Instructions
- Combine all ingredients into a blender or nutribullet and blend until creamy.
