Balsamic glazed sweet ripe plantains pan fried in coconut oil. This three ingredient delight could be your favorite new breakfast item. Nothing like a good sweet and savory combo, plantains and a veggie omelette. If you pan grill a good piece of Salmon, here is you side dish for lunch. Oh we are definitely not skipping that dessert. A hefty scoop of that favorite ice cream served with these is the way to go.

When you relocate to a new state or city , you can only hope to find your favorite things. That will be Balsamics and flavored oils for me. Back in Wisconsin, a weekend drive to Cedarburg is never complete without a stop at the Olive Sprig. You can’t help but fall in love with this store and everything in need. So many different flavors of balsamics and olive oils , its a foodies paradise. When I approached Linda, Owner of the Olive Sprig , about incorporating oils and balsamics in West African cuisine, she couldn’t agree more. Fast forward, a few months down the road, we have a full class. Home cooks excited to try something new. You can do so much more than a vinaigrette with flavored oils and balsamics. With so many different flavors out there, you can definitely give any dish a new dimension.

With my love for balsamic vinegar and flavored oils its only normal to keep my eyes peeled for a local vendor. Remember when going to the mall was a thing? Well, visiting local farmers markets in my thing. You see the faces behind your locally sourced food! I think its beyond amazing. Hearing their stories, seeing how passionate they are about their products. And how much pride they take in delivering high quality products. You can’t help but return for another dose of that good southern hospitality.
There is no way I’m passing through Galena Garlic Company shed without making a stop. I see the balsamic vinegar and oils! They apparently have a local shop which I cannot wait to visit. After sampling some super tasty balsamics, I settled for their 18 year old traditional balsamic vinegar.
I couldn’t bottle down the excitement to make these delicious balsamic glazed sweet ripe plantains. Ready in literally ten minutes. Why even debate the thought of making them. Skipping the traditional deep frying makes these less sinful, if that is even a problem. Using coconut oil pairs wonderfully with the dark balsamic vinegar. Three ingredients, ten minutes and here we are.
Here is to elevating simple ingredients into something much more. More flavorful, more appealing and much more delicious. Balsamic glazed sweet ripe plantains; because saying no to dessert is not an option.
Balsamic Glazed Sweet Ripe Plantains
Ingredients
- 1 over ripe plantain
- 1 Tbsp 18 year balsamic (Or any dark balsamic)
- 1 Tbsp Coconut oil
Instructions
- Wash , peel and slice plantains into 1/4 inch thick rings. Transfer into a bowl and add balsamic vinegar. Stir well and let sit for about 3-5 minutes
- Heat cast iron skillet and melt coconut oil. Pan fry plantain on each side for 2 - 3 minutes until the edges of the rings just starts to darken. Remove and transfer into serving plates. ( Very little coconut oil is used and you probably will not need to drain excess oil on paper towel)
- Drizzle a little more balsamic over plantains for that extra zing. Enjoy as is or with ice cream flavor of choice.
