BAKED WHOLE SNAPPER

This baked whole snapper is flavorsome, spicy and very enjoyable. We are definitely not intimidated by whole fish in this household but if you are; feel free to try this with fish steaks or fillets.

You’ve got 30 minutes to spare and love that kick and flavor packed bite of perfectly flaky fish? Then, here is an in and out of the kitchen favorite. Fresh herbs are a personal favorite when grilling or baking fish. The last tablespoons of my Cilantro Lime marinade paired wonderfully with poksspices extra spicy all purpose cayenne based seasoning.

You can take this in very different directions with the herbs used. Adding a dry rub, especially something spicy helps elevate the flavor profile. Marinating for hours is not necessary here, in fact this sat in the marinade long enough to preheat the oven.

OTHER FLAVOR PROFILES

Parsley , garlic and spring onion works wonderfully. In the absence of a dry rub like poksspices, you can add some heat with a scotch bonnet or habanero. I love blending everything together with salt and some olive oil, then generously rub the entire fish inside and out. The slits on the fish helps , not to deep but just enough to help with absorption.

COOKING WHOLE FISH

At the point it is best baked or grilled. This is baked at 350 preheated oven for 30 minutes. Some stuff with herbs for more flavor but blending and rubbing the insides of the fish is a method I prefer. There is no need to flip the fish at any point when baking. On the grill however, using a grill basket eases the flip.

Whether baking or grilling, this whole fish dish is easy, quick and will get you trying whole fish again and again. Enjoy with fried plantains , baked potato wedges or some vegetables. And don’t forget to share with us all what you’ve been cooking from our kitchen.

Ingredients
  

  • 2 whole white fish (snapper or tilapia)
  • 3 Tablespoons Cilantro lime marinade (recipe link )
  • 1/2-1 Tablespoon poksspices extra spicy all purpose seasoning (more or less )
  • 1-2 pinches of salt

Instructions
 

  • Remove any scales from fish and rinse. Using a sharp knife, make three angled slits on the fish.
  • Mix all spices in a bowl. Rub entire fish, inside and out ensuring the entire fish is coated. Transfer to a non stick baking pan (Can spay pan with pam) or line baking dish with foil.
  • Preheat oven to 350
  • Bake for 30 minutes uncovered or until it gently flakes off the bone with a fork.
  • Enjoy with your favorite side.
