BAKED SWEET PLANTAIN WEDGES

These baked sweet plantain wedges are the perfect balance of sweet and savory, soft with a slight crisp on the edges. They are one of our many ways to enjoy ripe plantains and a well-loved appetizer served during gatherings. Even better is the fact that they can be put together in just about 20 minutes!

THE PLANTAINS

Get plantains that a ripe enough but not too ripe. Some black spots are okay and make sure when you give a gentle squeeze there is a little give. Almost like a ready to eat avocado. You can find plantains at your local Mexican or Asian grocery. Some major retailers like Wholefoods, Publix or Walmart sometimes sell them.

PEEL AND CUT INTO WEDGES

Plantains are definitely easier to peel when they are ripe. Make a slit on one or two of the ridges on the plantain. Use your thump to lift and peel off the skin. Here is a quick demo on peeling plantains. You can now cut into wedges of about a 1/2 inch thickness and about 3 inches long.

RIPE PLANTAINS

SEASONING AND BAKING RIPE PLANTAINS

Since we will bake at a somewhat high temp, carefully choose your baking oil. We are using avocado oil and baking at 400 in a convection oven. You can also use an air fryer. Drizzle oil over plantain wedges, add you spices and toss to evenly coat. You can go either way with plantains. Here, its savory, you can go sweet so grab what you have and season up. Transfer onto a baking sheet lined with parchment paper, do not crowd. Bake for 15 minutes or until brown, flipping one time at about the 7-minute mark.

SERVING THE PLANTAIN WEDGES

Grab your favorite dipping sauce; its versatility gives you many options on how to serve. Here are a few of our favorite sauces to enjoy with these baked sweet plantain wedges.

Pepper sauce: Our hot pepper sauce is definitely our go to; sweet and spicy

Aioli: Also a good one, especially if it has a little heat.

BBQ sauce, ketchup, mayo and more.

Serve them right out of the oven. A soft bite with some crispy edges. They sure do go fast so make sure you have enough for your guests.

  • 3 large ripe plantains
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 1/2 tsp kosher salt

Instructions
 

  • Preheat convection oven to 400
  • Peel plantains. Cut in half, then slice each half into four wedges. Wedges should be about 1/2 inch thick and about 3 inches long
  • Drizzle avocado oil and rub to completely coat plantains. Mix your spices in a bowl and then add to plantains. Rub well to ensure plantains are evenly coated
  • Place wedges on a large baking sheet lined with parchment paper. Do not crowd.
  • Bake for 15 minutes or until brown. Carefully flip plantains halfway through baking.
  • Once ready, let cook slightly and enjoy warm with your favorite dipping sauce.

Notes

Baking for too long and at a too low of a temperature will cause the plantains to be chewy. This can be okay if the plantains are slightly overripe but if they are just ripe it might be a little to tough for some.
Plantains should be slightly over ripe with some black spot on the skin. They should also feel a little soft when you try to gently apply pressure when holding.
