Spicy Avocado Toast and Egg

Ingredients
  

  • 1 Large Avocado
  • 1 Tbsp distilled vinegar
  • 1 Tbsp Vegenaise (sub with mayonnaise)
  • 1 tsp maple syrup
  • 1 tsp Essiespice Mango Chili Medley ( or more )
  • 2 slices of bread.
  • 1 Tbsp chopped red onion
  • a sprinkle or red pepper flakes
  • cilantro for garnish

Instructions
 

  • In a bowl combine , vegenaise, distilled vinegar, maple syrup and the mango chili medley. Stir well until homogeneous. Peel and cut avocado into small chunks. Transfer into bowl and mix gently ensuring it's not mushy. Set aside.
  • Heat about a table spoon of oil in a large non stick pan. Carefully crack eggs , ensuring yolk stays intact. Cook until white is set and edges are just brown and crispy.
  • Toast bread in toaster or grill. Spread mango chili medley on toast (optional for more heat). Add scoops of avocado mix and spread. Top with fried egg. Season eggs with some salt and a dash of red pepper flakes.
  • Garnish with fresh cilantro and enjoy
