Instructions
  1. Whisk eggs with onions and tomatoes, season with a pinch of salt
  2. Heat oil in a medium skillet and add eggs. Do no scramble.
  3. Cook until set enough to flip (~3 minutes). Flip and cook for another couple of minutes or so.
  4. Slice baguette down the middle and fill the pocket with cooked eggs. Garnish with chopped fresh parsley and serve
